Ingredients:

  • 800g beef chuck or braising steak, cut into 2cm cubes
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, peeled and diced
  • 3 cloves garlic, minced
  • 500ml beef stock
  • 400g can chopped tomatoes
  • 2 bay leaves
  • 1 tbsp thyme
  • Salt and pepper

Instructions:

  1. Preheat oven to 150°C.
  2. Heat oil in a large ovenproof pot over medium. Brown beef in batches; season with salt and pepper. Remove to a plate and set aside.
  3. Sauté onion and carrots for 5 minutes until softened. Add garlic and cook for 1 more minute.
  4. Return beef to pot along with remaining ingredients. Bring to a simmer, cover and place in the oven.
  5. Cook for 3-4 hours, until beef is very tender.
  6. Remove bay leaves before serving stew hot with crusty bread. Enjoy!
