How to make Healthy Shephard's Pie

Here's how to make a healthier version of shepherd's pie.

Shepherds pie is a classic comfort meal that has sustained many families over the years. But that doesnt mean it cant get a healthy makeover! This healthy version of the traditional shepherds pie is made with lean ground beef, a variety of vegetables, and a mashed potato topping that replaces the traditional butter and cream with tangy Greek yoghurt.

Not only is this delicious shepherd’s pie full of good-for-you ingredients, but it can also be prepped ahead of time and gives you four servings – perfect for meal prepping and weeknight dinners. With just a few simple swaps, you can enjoy a healthier version of this traditional dish without sacrificing any flavour.

Healthy Shepherd’s Pie Ingredients:

  • 1 tablespoon olive oil
  • 1 lb lean ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 cups frozen mixed vegetables (carrots, peas, corn, etc.)
  • 1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1/2 cup beef broth
  • 4 medium potatoes, peeled and diced
  • 1/4 cup Greek yoghurt
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 190 degrees.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned about 5 minutes. Add onion, garlic, tomato paste, and frozen vegetables and cook until onion is softened, about 5 minutes more.
  3. Stir in thyme and flour and cook for 1 minute. Then add beef broth and bring to a simmer. Cook for a few minutes, stirring occasionally, until slightly thickened.
  4. Meanwhile, place potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and return to the pot.
  5. Add Greek yoghurt and mash with a potato masher until desired consistency is reached.
  6. Transfer the beef mixture to an oven-safe baking dish and spread mashed potatoes over the top.
  7. Bake for 25-30 minutes, or until the top starts to brown.
  8. Allow to cool slightly before serving. Enjoy!
