Ingredients – addition of other ingredients such as capers or leeks to suit client’s preferences
I piece of fish (such as a salmon fillet or cod loin)
Drizzle of olive oil
Squeeze of lemon juice
Salt and pepper to taste
Method
- Heat oven to 200C/180C fan/gas 6. Place a sheet of foil large enough to wrap the salmon fillet on the work surface
- Drizzle the foil with oil and place the fish on the top
- Squeeze over the lemon juice,
- Bring the foil up over the fish and join the two edges together by folding them over several times to make a parcel
- Wrap the fish loosely so that steam will form to cook the fish
- Bake for 12-15 mins, depending on how well done you like your fish, then carefully tear open the parcel.
