Soft Hoisin Mince with Steamed Rice & Fried Egg

Ingredients (Serves 2)

  • 250g lean beef or chicken mince
  • 1 tablespoon olive oil or sesame oil

  • 1 small onion, finely chopped

  • 1 clove garlic, minced

  • 1 tablespoon hoisin sauce (use low-sodium if possible)

  • 1 teaspoon soy sauce (optional, low-sodium)

  • ½ cup water or low-salt broth

  • 1 cup cooked white or brown rice

  • 2 eggs

  • Black pepper to taste

  • Optional garnish: finely chopped spring onion

Instructions

  1. Heat oil in a pan over medium-low heat.
  2. Add onion and cook gently until soft.
  3. Add garlic and cook for 30 seconds.

  4. Add mince and cook until just browned, breaking it up finely.

  5. Stir in hoisin sauce, soy sauce (if using), and water.

  6. Lower heat and simmer for 5–7 minutes until the mince is soft and saucy.

  7. In a separate pan, lightly fry eggs to your preference (soft yolk recommended for easier chewing).

  8. Serve hoisin mince over warm rice and top with a fried egg.
