Tired of washing up loads of dishes after dinner? This one-pan traybake is healthy, full of flavour, and requires minimal clean-up — just pop everything in the oven and relax!
1 sweet potato, peeled and diced
1 red onion, cut into wedges
1 courgette, sliced
1 bell pepper, chopped
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic
1/2 tsp dried thyme
Salt and pepper to taste
Optional: a handful of cherry tomatoes or broccoli
Preheat your oven to 200°C (180°C fan) / 400°F.
In a large bowl, toss the chicken and vegetables with olive oil, paprika, garlic, thyme, salt, and pepper.
Spread everything out evenly on a baking tray lined with parchment paper.
Roast for 25–30 minutes, or until the chicken is cooked through and the veggies are golden and tender.
Serve as is, or with a side of couscous, rice, or a leafy salad.
