One-Pan Roasted Veggie & Chicken Traybake

Tired of washing up loads of dishes after dinner? This one-pan traybake is healthy, full of flavour, and requires minimal clean-up — just pop everything in the oven and relax!

Ingredients (Serves 3–4)

  • 2 chicken breasts (or thighs), chopped into chunks
  • 1 sweet potato, peeled and diced

  • 1 red onion, cut into wedges

  • 1 courgette, sliced

  • 1 bell pepper, chopped

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1 tsp garlic

  • 1/2 tsp dried thyme

  • Salt and pepper to taste

  • Optional: a handful of cherry tomatoes or broccoli

Instructions:

  • Preheat your oven to 200°C (180°C fan) / 400°F.

  • In a large bowl, toss the chicken and vegetables with olive oil, paprika, garlic, thyme, salt, and pepper.

  • Spread everything out evenly on a baking tray lined with parchment paper.

  • Roast for 25–30 minutes, or until the chicken is cooked through and the veggies are golden and tender.

  • Serve as is, or with a side of couscous, rice, or a leafy salad.
