Luxuriously Creamy Cauliflower Pasta: Comfort in Every Bite

Ingredients
- 2 cauliflowers (about 1.3kg), ⅓ cut into small florets, ⅔ finely chopped
- 3 tbsp olive oil
- 1 large red onion, cut into thin wedges
- 30g pumpkin seeds
- 1 vegetable stock pot, made up to 1ltr
- 2 tbsp tahini
- 300g rigatoni
- 250g baby spinach
- 1 tsp crushed chillies (optional)

Method
- Preheat the oven to gas 7, 220°C (fan 200°C). Place a large baking tray inside to heat up.
- Toss the cauliflower florets with 1 tbsp oil and arrange them over half of the hot tray. Toss the onion with ½ tbsp oil and place on the other side of the tray.
- Bake for 20 minutes, then add the pumpkin seeds around the onion. Return to the oven for another 5 minutes until the cauliflower is tender and caramelized. Turn off the oven and leave the tray inside to keep warm.
- Meanwhile, heat the remaining 1½ tbsp oil in a large, lidded saucepan over medium heat. Cook the finely chopped cauliflower for 5 minutes, stirring frequently to avoid browning.
- Add the stock, cover, and bring to a boil. Reduce to a simmer and cook for 12 minutes.
- Blend the mixture using a blender or a stick blender until smooth and creamy. Stir in the tahini and season to taste. Set aside half of this sauce (800g) for another meal, keeping the rest in the pan.
- Cook the pasta according to the package instructions, adding the spinach for the last 2 minutes to wilt.
- Drain and stir the pasta into the creamy cauliflower sauce in the pan.
- Serve the pasta topped with the roasted cauliflower, onion, toasted pumpkin seeds, and a sprinkle of crushed chillies if desired.
